Peri Peri Chicken

You’re not camping – you’re on safari! And with these fantastic recipes you can cook easily and quickly in your campervan, you’ll be cooking yummy dinners in the New Forest before you know it!

INGREDIENTS:
4 chicken thighs
1 tbsp balsamic vinegar
2 small chillies (chopped and seeds removed)
1 tsp mixed herbs
2 cloves of garlic (crushed or finely chopped)
Juice from half a lemon
1 tsp honey

METHOD:
1. Slice the chicken thighs into strips
2. Mix together the vinegar, chillies, mixed herbs, garlic, lemon juice and honey
3. Pour this mix over the chicken in a bowl and ensure all thighs are well covered
4. Cover the bowl and leave to marinate in fridge for 30 minutes
5. Cook the chicken on a BBQ for 15 minutes (or until juices run clear), turning every 5 minutes
6. Serve with some spicy rice or a colourful salad
